2017 Cabernet Sauvignon - Champoux Vineyard
Tasting Notes
This is the first Cabernet Sauvignon we have made from Champoux Vineyard and it is a beauty! 91% Cab Sauv and 9% Cab Franc, this wine has a gorgeous aroma and an even better set of flavors. The grapes were fermented in a large French oak tank for fifteen days and then drained into French oak barrels to finish off the fermentation giving the wine a smooth and silky mouthfeel. We barrel aged the wine for two years before bottling it in July 2019. This Cab is drinking really nicely right now, but if you want to age it for another five to seven years you will be seeing it at its best. Collectors can put this wine down for 10+ years without any worry. Less than 25 cases remain after allocation.
