Tasting Notes

In the early 2000’s,  Dick Shaw began planting a set of vineyards on Red Mountain including Quintessence Vineyards, Obelisco Vineyard and Shaw Vineyards.  Our 2015 Cabernet Sauvignon is from two blocks in Shaw Vineyards which is located at the top of the Southwest side of Red Mountain.  Marshall Edwards is the Vineyard Manager for all of Dick Shaw’s vineyards and was recently named the 2017 Wine Grower of the Year.  Read his story and the story of the vineyards here!  

With rich aromas and flavors that remind John of his mom’s cherry cheesecake (with a crumbled graham cracker crust, of course!), this Cab was fermented in French oak tanks, aged for 22 months in 70% new French oak barrels and reveals the best fine tannins of any Red Mountain Cab we have produced. We couldn’t resist putting this one in bottle all by itself!
